Lime Icebox Cake

Ingredients

  • 1 can (14 oz / 396g) sweetened condensed milk
  • 1 can (12 oz / 354ml) evaporated milk
  • 1/2 cup (120 ml) fresh Key lime juice
  • 1 teaspoon of vanilla extract
  • 1–2 sleeves Maria cookies (or graham crackers as an alternative)

Instructions

Blend the filling:
  • In a blender, combine:
    • Sweetened condensed milk
    • Evaporated milk
    • Fresh lime juice
  • Blend until smooth and creamy.

Layer the Carlota:
In a medium glass dish or loaf pan (8×8 or similar):
  • Spread a thin layer of the lime mixture at the bottom.
  • Add a layer of Maria cookies, covering the bottom.
  • Pour more lime mixture on top to cover the cookies.
  • Repeat the layering until you run out of filling, ending with the cream on top.

Chill:
Cover and refrigerate for at least 4 hours (or overnight) until the dessert is firm and the cookies have softened into a cake-like texture.

Serve:
  • Garnish with lime slices or zest.
  • Cut into squares and enjoy cold!
